I placed the market lambs 3412. I quickly began with the heaviest muscled, most carcass driven lamb. Now admittedly if I could improve the wooly legged lamb I would like to see him longer and more extended through his front end and he could be a notch trimmer about his breast plate, still he is the most massive lamb in class. Not only does he fill my hand with the most expansive rack, but he also offers the widest deepest loin. He has the most dimension to his leg and this is validated as he fills my hand with the most shape and volume. Consequently due to his distinct class advantages he should fabricate a carcass with the most total pounds of rack loin and leg. Now I do realize that 4 is longer and more extended through his front end, but at the same time he is also narrower constructed as he flattens to the lower portion of his leg.
Yet it’s his true meat animal shape that allows me to place 4 over 1 in the middle decision. The bottom line is he’s a fresher handling lamb that offers more substance to his top. He becomes progressively wider from his shoulders back and he definitely handles with more dimension to his loin. In turn I would expect him to process more total pounds of loin eye muscle. Sure 1 is without question the trimmest handling lamb in class and he measures a longer hind saddle, but unfortunately for him he is also the most washed out over his rack and loin and is the harshest handling lamb in class. But it is still 1’s distinct advantages in trimness and power that allow me to place him over 2 in the easiest final decision. First of all he is the longest and trimmest patterned lamb, that with out question exhibits a greater volume of muscle through his top and shows more shape and dimension to all portions of his leg. Consequently he will cut more total pounds of boneless closely trimmed retail cuts. Now I will be the first to admit that the thick pelted whether is easily deeper bodied, but this is where his advantages quickly end as he is the narrowest constructed, lightest muscled and the fattest lamb in class. And from a packers perspective he should leave the most carcass waste on the trim table so I easily placed him fourth. |
