Job Description: The Corporate Meat Procurement Department, located in Englewood, Colorado, has an opening for a Corporate Meat Tenderness Auditor.
Qualifications:
4-year college degree (preferably in Meat/Animal/Food Science) or equivalent meat industry experience required.
Meat and/or Livestock Judging and/or Meat Animal Evaluation a plus.
Experience in Meat/Food Science or Animal Science a plus.
Muscle & tissue anatomy plus cellular properties knowledge.
Knowledge of Beef Quality Audit Stand! ards
Livestock Production/Animal Husbandry/Animal Welfare k! nowledge and training a plus.
Processing/Plant and/or Retail Meat environment experience a plus.
Experienced in operation of meat processing equipment (band saws, vacuum packaging systems, weigh systems) Ability to learn to use shear testing equipment.
PC skills necessary requiring proficiency in Microsoft Office including Word, Excel and Access.
Exemplary laboratory practices.
Must be detail oriented and organized with prior research data collection skills including data analysis/SAS and file maintenance.
Must be self-motivated with a positive attitude, able to handle and address daily problems.
Possess creativity with a high degree of initiative.
Able to work with minimal supervision.
Excellent written and oral communication skills.
Able to lift up to 70 pounds.
Must possess a valid driver’s license and clean motor vehicle record.
Key Responsibilities include, but are not limited to:
Audit Vendor Partner Feed Lots and Processing Plants! for compliance of Tenderness Protocol and Process Quality Control Points.
Conduct Corporate Meat/Seafood product testing and evaluation program.
Specific data collection including management of sample collection, shipping, receiving, storage and eventual testing/evaluation(s).
Equipment operation per the specifications of a detailed research protocol.
Meticulous management of the data analyses & required report generation and dissemination including sample records/sample results and database management.
Communicate and work with vendor “field” sample collectors and Safeway QC personnel to insure proper handling of sampling materials.
Conduct all aspects of Sample collection and Meat Slice Shear Force testing.
Develop and implement action plans to correct deficiencies.
65% travel required for feed lot and processing plant inspections.
